Pag cheese is one of the trademarks of the island. Its uniqueness is in its hardness and salinity, and specific smell and taste. There specialty cheese is the basic raw material - milk of sheeps. The sheep on the island are free to roam the pastures that are rich with aromatic plants, and there is a peculiar microclimate where an essential element is the Pag bura (wind) which brings the salt from the sea to the meadows. Sheep eat grass and because of this mix of grass of various flavors with a touch of sea salt their milk becomes specific and can not be obtained by any artificial means.
